Chili

I totally ruin the "veganness" of this by adding sour cream and cheese.  But it's good without, too.

Chili Ingredients:

1 can navy beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 can diced tomatoes, not drained
1/2 of a small can of corn, drained
1 sprig basil chopped
4 cloves garlic, minced
1 medium summer squash, halved lengthwise and sliced
1 medium zucchini, halved lengthwise and sliced
1 yellow bell pepper, diced
1 package chili seasoning
1 package Badia sazon.
1/2 package Boca crumbles

Chili Preparation:
  1. Combine all ingredients except boca crumbles in a large pot (or a crock pot). 
  2. Add enough water to cover entirely.
  3. Cook until squash starts to be tender.
  4. Add Boca.  
  5. SImmer uncovered to let water reduce.
